Our verdict
Nine generations of the same family, running since 1806, in a shop with fifteenth-century caves underneath it still used to age hams and pecorino. The tartare gets singled out by more reviewers than any other single dish on Greve's piazza. This is a butcher counter and bistro combined — go for a plate of cold cuts and a glass from next door's enormous wine list, not a sit-down meal.
